We had our first snow today in my part of Michigan! It was beautiful, but cold, and it finally convinced us to turn our heat on for the first time this season.
Warming, hearty dishes are definitely in order these days. Winter squash such as pumpkin, butternut, and acorn are very filling and can be turned into all manner of autumn comfort food. Cooked and pureed squash can be added to pancakes and blended into coffee, while chopped and roasted squash is a perfect side dish for supper.
This creamy and filling risotto is reminiscent of mac and cheese, but provides more depth of flavor with the bacon and squash. We served it in bowls and enjoyed a simple meal on the couch, huddled under afghans as we watched a movie.
