This week will be both hectic and relaxed. My husband is home from work until after the New Year, which means I will have to be more thoughtful in meal preparation for breakfast and lunch. Usually he eats leftovers and I eat fried eggs if there aren’t enough leftovers, but because we will be having dinner with friends or out a couple of nights, there won’t be a lot of leftovers. Here are some things we will be noshing on this week:
Breakfasts:
Christmas morning-scrambled Eggs, Bacon, gluten-free Cinnamon Rolls
Pumpkin Oatmeal
Grain-Free Apple Cinnamon Coffee Cake
Lunch:
Irish Nachos
Chicken and Rice Soup
Chef Salads with hard boiled eggs, ham, cheese, etc.
Dinner:
Black Bean Soup
Salmon with Probiotic Dill Sauce
Bacon Wrapped Chicken with Italian Salsa
Shrimp Au Gratin
Snacks:
Celery, Red Pepper strips, Carrot Sticks, with homemade Ranch dip
Spinach and Artichoke Dip with Gluten-Free Crackers
Stuffed Mushrooms
