As a weekend bonus, our contributor Katie is sharing an easy and nutritious breakfast recipe. Have a splendid weekend!

On Thursday, we chatted about fats: what makes them good and how to use them.  Let’s put our knowledge to work and whip up a power-packing, satisfying dish, filled with some good fat and protein.  This recipe features raw, extra virgin coconut oil, offering metabolism and immune strengtheners as well as antibacterial and antimicrobial properties.  Walnuts, like coconut oil are high in omega-3.  Brain-boosting walnuts round things off nicely with their high protein and fiber content.  Dates are high in several minerals and the fat in coconut oil and walnuts allow your body to absorb them.

  1. Where do you purchase your dates? Hopefully somewhere besides Azure Standard (I live on the east coast and they do no ship here). Thanks!

    • Bummer about no Azure Standard on the east coast 🙁 However, we don’t eat a lot of dates at our house, but when we do, I pick them up at the local produce stand. They are pricey, so maybe other readers will have some suggestions!

  2. When I lived on the east coast I was able to find dates at my grocery stores with the other produce. I have noticed them in most grocery stores on the west coast as well.

  8. Is the recipe missing from this post? I had it saved on Pinterest and I was pretty sure it linked right back to the recipe, but now I can’t find it!?

    • Hi Diana! Our site is in the process of a re-design and because of that, some of the recipes have been lost. We are working on it now and hope to have them up in the very near future. Thank you for your patience!
